Easy, delicious, bite sized. Everything you need for a morning set up for success. These quiches are perfect to make in a large meal prep setting to enjoy for the busy days in your week ahead. I recommend eating these alongside fresh fruit, or a veggie hash, with bacon or sausage for a well rounded meal to start your day.
Sunday Morning Mini Quiches
Ingredients;
Pie crust dough
5 pasture raised eggs
1/2c heavy cream
1/4c grated grass fed butter
1/4c goat cheese
1 small red onion finely diced & sautéed
2c finely chopped spinach or arugula
2 tsp salt
1 tsp fresh cracked pepper
Directions;
Put a stick of butter in the freezer.
Liberally grease 2 muffin tins, and flour your counter top. Roll out the pie dough to about 1/8in thick. Using a large circle cookie cutter, or a wide mouth mason jar lid, cut the dough into circles and tuck into the muffin tins. Roll and reuse scrap dough as you go until all of the dough is used. Once your dough is all cut and tucked into the muffin tins, put both trays in the freezer while you prep the filling
Finely dice a small red onion, sauté it, and set aside in the fridge to cool.
Meanwhile, chop your spinach, grate 1/4c of your frozen butter stick, and measure out 1/2c of heavy cream.
Once all of your ingredients are prepped, crack 5 eggs into a large bowl, pour in the cream, salt and pepper & whisk. Add in the goat cheese and butter and thoroughly whisk until a thick creamy texture is achieved. Stir in the spinach and red onion.
Preheat the oven to 375f and pull out your frozen prepped muffin tins.
Using a measuring cup, fill each liner with shy of 1/4c of the egg filling. (Egg filling will rise!)
Once all of the mixture is in the tin, put the quiches in the oven and bake for about 25 minutes, until the egg is set and the edges/bottom of the quiche dough is cooked and has started to slightly brown.
Allow quiches to cool in the pan for 5 minutes, then remove to a cooling rack for another 5 minutes
before serving.
Suggested serving of 2 per adult and 1 per child if applicable, with a side of fresh fruit or veggie hash & bacon or sausage. Once the quiches are completely cool, Divide the remaining quiches into 3 bags for an easy breakfast to reheat in the oven, for the week ahead.
